For this recipe I am featuring a healthier version of the standard baked cheesecake featuring a gluten free nut crust, no refined sugar, coconut oil and Greek yogurt. It is a no bake cheesecake - well actually I did bake the almond and coconut flour crust, which I recommend doing because it just tastes better lightly toasted. But the filling doesn't need any baking and comes together so quick and easy. I love Gluten Free Desserts and this Healthy No Bake cheesecake recipe is super easy to make and guaranteed to satisfy your cheesecake cravings. So let's get started!

INGREDIENTS
Crust
1 1/2 cups almond flour ( blanched or unblanched is fine)
1/2 cup coconut flour
1/2 cup coconut palm sugar or date sugar (brown sugar is also fine)
1/3 cup extra virgin coconut oil
You will need a 9 to 10 inch tart pan with removable bottom - or you can use 4 x 4 inch tart pans. Bake in oven at 350 Fahrenheit for just 12 to 15 minutes - until light golden brown. allow to cool completely before filling.
Filling - Follow instructions in video
8 oz. cream cheese - softened to room temperature
1 cup Greek yogurt
3 to 4 Tbsp. maple syrup or raw honey
1 Tbsp. lemon zest
1/2 cup lemon juice
1 tsp. Vanilla extract
Chill in fridge for 2 to 4 hours - or over night before serving.
Top with lemon zest and fresh berries of your choice and enjoy!
