FULL WRITTEN RECIPE FOR MEGHANA BIRYANI
INGREDIENTS:
FOR BIRISTA
ONION BIRISTA | प्याज बिरिस्ता 250 ग्राम
FOR PANEER
PANEER | पनीर 350gm
CORN STARCH | कॉर्न स्टार्च 2 tbsp
MAIDA | मैदा 2 tbsp
BLACK PEPPER POWDER | काली मिर्च पाउडर 1/2 tsp
CHILLI POWDER | लाल मिर्च पाउडर 1/2 tsp
TURMERIC POWDER | हल्दी पाउडर 1/4 tsp
SALT | नमक PINCH OF
GINGER GARLIC AND GREEN CHILLI PASTE | अदरक, लहसुन और हरी मिर्च का पेस्ट 1 TSP
WATER | पानी 3 Tbsp
FOR MASALA / BASE
OIL | तेल 2 TBSP
CUMIN | जीरा 1 tsp
GREEN CARDAMOM | इलायची 2-3 NOS.
CLOVE | लौंग 3-4 NOS.
MACE | जावित्री 1/2
CINNAMON | दालचीनी 1 INCH
BLACK PEPPER CORNS | काली मिर्च के दाने 6-7 NOS.
STAR ANISE | चक्रफूल 1 NOS.
DRY RED DRY CHILLI | सूखी लाल मिर्च 1-2 NOS.
ONION | प्याज 1 CUP (CHOPPED)
CURRY LEAVES | करी पत्ते 10-15 NOS.
GINGER GARLIC AND GREEN CHILLI PASTE | अदरक, लहसुन और हरी मिर्च का पेस्ट 1 TBSP
CORIANDER POWDER | धनिया पाउडर 1 tbsp
TURMERIC POWDER | हल्दी पाउडर 1/2 tsp
KASHMIRI CHILLI POWDER | कश्मीरी मिर्च पाउडर 1 TBSP
BIRYANI MASALA | बिरयानी मसाला 2 TBSP
TOMATO | टमाटर 2 CHOPPED
SALT | नमक TO TASTE
THICK CURD | गाढ़ा दही 1/2 Cup
PREPARED PANEER | तैयार पनीर
MINT LEAVES | पुदीने का पत्ता SMALL HANDFUL (CHOPPED)
CORIANDER LEAVES | धनिए के पत्ते SMALL HANDFUL (CHOPPED)
FRESH CREAM | ताज़ा मलाई 2-3 TSP (OPTIONAL)
Boiling rice
Ingredients:
• WATER | पानी 1 LTR. (TO COOK THE RICE)
• SALT | नमक AS REQUIRED
• BAY LEAF | तेज पत्ता 1-2 NOS.
• CINNAMON | दालचीनी 1 INCH
• CARAWAY SEEDS | शाह जीरा 1 TSP
• GREEN CARDAMOM | हरी इलायची 2-3 NOS.
• CLOVES | लौंग 2-3 NOS.
• STAR ANISE | चकरी फूल 1 NOS.
• BLACK PEPPERCORNS | काली मिर्च 3-4 NOS.
• GREEN CHILLI | हरी मिर्च 1 NOS. (SLIT)
• BASMATI RICE | बासमती चावल 1 CUP (WASHED & SOAKED FOR 1 HOUR)
ASSEMBLE:
GHEE | घी 2 TSP
PREPARED MASALA | तैयार मसाला
BIRISTA | बिरिस्ता
MINT LEAVES | पुदीने का पत्ता SMALL HANDFUL (CHOPPED)
CORIANDER LEAVES | धनिए के पत्ते SMALL HANDFUL (CHOPPED)
COOKED RICE | पके हुए चावल
BARISITA | बिरिस्ता
MINT LEAVES | पुदीने का पत्ता SMALL HANDFUL (CHOPPED)
CORIANDER LEAVES | धनिए के पत्ते SMALL HANDFUL (CHOPPED)
GHEE | घी 2 TSP
KEWRA WATER | केवरा जल 2 -3 DROP
BIRYANI MASALA | बिरयानी मसाला 1 TSP
RICE WATER STOCK | चावल का पानी 1 TBSP
