Cluster beans/Guvar beans Sabzi With green Moong & Brown chana sprouts
Servings -4
🔺Note-Choose tender cluster/Guvar beans to prepare this Sabzi , if the cluster beans are not tender then it requires stringing. Break the top with hand & pull it towards the bottom to remove fibrous thread.
If the cluster beans are tender then it doesn’t require stringing just trim the top & bottom sides & cut beans into 2-3 inches long pieces
(Step-1)
-200 gms Cluster/Guvar tender beans.
-4 tbsp oil or as required
-1 tbsp ghee
-2 medium size potatoes cut into cubes
-4 medium size tomato grated
-1 big onion finely chopped
-11/2 tbsp ginger & garlic paste
-11/2 cup mixed soaked green Moong sprouts & brown chana sprouts (readymade soaked from the store)
(Step-2)
MIXED DRY SPICES
(Mix all dry spices in a bowl
Except 1/2 tsp cumin seeds )
-1 tsp red chili powder
-1/4 tsp turmeric powder
-11/2 tsp coriander powder
-1 tsp peanut garlic chutney powder
-1 tsp roasted peanut powder
-1/2 tsp dry mango power
-(1 tsp cumin seeds -do
Not mix)
-1/2 tsp dry mango powder
-1 tsp sugar
-Salt to taste
Method
-Wash and soak brown chana & green sprouts for 1 hours,
-After one hour drain off the water transfer to a bowl with cluster/Guvar beans and potatoes
-wash tender cluster/ Guvar beans (please check 🔺NOTE) properly just trim the top & bottom sides & cut beans into 1-2 inches long pieces set a side in a bowl
LETS COOK
-Heat oil/ghee in a pan over medium heat add cumin seeds allow to splutter
-Add chopped onion sauté until they turn golden (add oil if required)
-add ginger & garlic paste fry until raw smell goes away (30 seconds)
-Add mixed dry spices stir and cook until aromatic (1 second, do
not burn the masala)
-Add chopped tomatoes stir and cook for 5 minutes then add mixing dry spices, close the lid and cook until oil separates from the masala
-Now add cluster/guvar beans, diced potatoes, mixed green sprouts & brown channa sprouts .
-Mix well add 2-3 tbsp hot water
close the lid and on medium flame pressure cook it for 2 whistles (we want brown chana & Moong sprouts tender cooked not mushy)
Turn off the flame & let the pressure release naturally
-Open the lid add dry mango powder gently mix and serve with roti, puris or as a side dish with dal with vinegar pickle, mango pickle, papad.
