How To Make Takikomi Gohan (Japanese Pilaf)

Описание: Takikomi Gohan (炊き込みご飯) literally means "cooked with rice" in Japanese and refers to a class of rice dishes made by cooking various ingredients with rice. This particular one is also known as Gomoku Gohan (五目ご飯) and includes a mix of mushrooms and vegetables cooked with the rice like a Japanese-style pilaf. There's no chicken or dashi in this Takikomi Gohan, which makes it vegan and vegetarian friendly, but it's still loaded with flavor thanks to the dried shiitake broth and konbu cha (kelp stock) the rice is cooked with. I show you how to make this Japanese mixed rice on the stovetop, but this can also easily be made in a rice cooker.

INGREDIENTS FOR TAKIKOMI GOHAN
2 cups water
10 grams dried shiitake mushrooms (2 large mushrooms)
310 grams Japanese short-grain rice (1.5 US cups of rice or 2 rice cooker cups)
1 tablespoon vegetable oil
50 grams carrots (cut into thin matchsticks)
50 grams maitake mushrooms (stem discarded, and caps sliced thinly)
50 grams burdock (sasagaki see video for technique)
1 sheet aburaage (fried tofu sheets, chopped) 
1/4 cup sake
2 tablespoons soy sauce
2 teaspoons sugar
1 teaspoon konbu cha
Mitsuba (for garnish)
