Ingredients :
2 lbs beef shank, cut into 3-inch chunks
1 medium onion, sliced
2 tbsp ginger-garlic paste
2 tbsp oil
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp turmeric powder
1 tsp red chili powder
Salt, to taste
4 cups water
1 cup wheat flour (atta)
Fresh cilantro, for garnish
Lemon wedges, for serving
Instructions :
1 Prepare the spice blend : Roast and grind cumin seeds, coriander seeds, and other spices to make Nihari masala.
2 Brown the onions : Heat oil and sauté sliced onions until golden brown.
3 Sear the meat : Add beef chunks and cook until browned.
4 Add spices and water : Mix in ginger-garlic paste, Nihari masala, and water. Bring to a boil, then simmer for 2-3 hours or pressure cook for 45 minutes.
5 Thicken the gravy :Mix wheat flour with water to make a slurry. Add to the Nihari and stir well.
6 Serve : Garnish with cilantro, lemon wedges, and naan or rice.
Tips:
Use bone-in beef shank for richer flavor.
Toast and grind spices fresh for more intense flavor.
Simmer slowly for tender beef and rich flavor.
