I decided to explore this because I was having trouble shaping my loaves with a high hydration. The flour available to me here isn't strong enough to hold 80% hydration, but I'd like to maintain that level.
I use a simple sourdough recipe for each loaf, adding the ingredients separately, and then bake them together. Come bake with me and see what happens! Whether you're a seasoned baker or just starting out, you'll learn something new and exciting.
