Fuzzy Melon Soup is a delicious, traditional Chinese soup. The secrets to making Chinese soups have been passed down over generations. Here is our recipe for traditional Chinese soup.
Viwers have told me that fuzzy melon is the young version of winter melon. In this recipe, the surface of the melon is not fuzzy. I was told later the melon will develop a fuzzy layer on the surface. Then it continues to grow to a full size winter melon. I'm always learning something new. Thanks to my viders for their input.
It's easy to make this melon soup for lunch, dinner or snack. It's a real comfort food in the winter time. Recipe is below:
Chinese Fuzzy Melon Soup 中式冬瓜汤
3 pork neck bones
1 medium size fuzzy melon
3 pieces ginger (thumb size)
2 tablespoons goji berries
6 to 8 red dates
Cooking Instructions:
In a small pot, parboil the pork bones in boiling water for 5 to 10 minutes. Rinse in cold water. Add 8 to 12 cups water into a large pot. Add pork bones to the water. Add 3 pieces of ginger. Bring water to a boil.
When water is boiling, reduce heat setting to simmer. Soup should be simmered for a minimum of 1/2 hour to 2 or more hours. Cut fuzzy melon into 1 inch cubes. Fuzzy melon should be added into the soup in the last 20 to 45 minutes, depending how tender you want them. Add goji berries and Chinese dates in the last 20 to 30 minutess.
Serve the soup in a nice soup bowl or turrine. Scoop soup into individual bowls.. Enjoy!
