CHINESE CHICKEN NOODLE SOUP WITH BONE BROTH 中国鸡肉面汤食谱
2 portion ming bean vermicelli mppdles
4 oz. sliced chicken velvetized
1/2 cup bean sprouts
1 cube chicken soup base
3 cups turkey bone broth
3 cups water
1 tablespoons chopped garlic
1 tablespoon fresh ginger
3 Chinese red dates
1/4 cup carrot slices
2 to 3 tablespoons goji berries
3 Chinese mushrooms
Soak dried Chinese mushrooms for 2 hours or more. Chop garlic intosmll pieces. Ginger can remain as large pieces.
In a pot, add 3 cups turkey bone broth and 3 cups wqter. Bring to a boil. Add garlic, ginger Chinese red dates, carrot and Chinese mushrooms. Simmer broth for 15 minutes to 1 hour. Add goji berries in the last 15 minutes.
Soak vermicelli noodles according to the package. In this video, the mung bean vermicelli noodles were soaked for 5 minutes. In a separate pot, bring water to a boil. Add vermicelli noodles and cook for 1 minute. Put noodles in a strainer and rinse with cold water to stop the noodles from further cooking. Set noodles aside.
Velvetting Chicken To Tenderize
1 tablespoon cornstarch
3 tablespoons light soy sauce (regular soy sauce)
5 to 6 tablespoons peanut oil (or other cooking oil) + 3 tablrspoons
1 teaspoon sesame oil (optional)
1 teaspoon Chinese oyster sauce
Slice 4 oz. chicken breast or chicken thigh. Usually dark meat such as chicken thigh does not need velvetting. To velvet chicken breast, put cornstarch, light soy sauce, peanut oil sesame oil and Chinese oyster sauce in a bowl and mix well with chicken. Marinate at least 1 hour and preferably overnight for maximum tenderness.
Slice 4 oz. chicken and marinate
When you are simmering the soup broth, preheat a frying pan at medium to medium high heat. Add 3 tablespoons cooking oil to heat up in pan. Add chicken slices and grill for about 3 to 4 minutes.
TO SERVE CHICKEN NOODLE SOUP
In a nice soup bowl, add cooked noodles. Add turkey bone broth with the ingredients to the bowl. Add grilled chicken slices to top up soup. Enjoy!
