Ingredients
200 grams (I used 1 chicken breasts)
2 cup chicken stock
1.5 cups coconut milk
1 galangal cut into thin rounds.
2 stalks of lemongrass
4-5 Shallots
4-5 kaffir lime leaves
150g oyster mushrooms
2-3 Thai chilies bruised or cut into large pieces
2 Tbsp fish sauce
3 tablespoons of lime juice
small bunch of coriander and long coriander
chili oil for boot colour (optional)
