4 oz (120 ml) ginger beer

CANCHANCHARA
2 oz (60 ml) light rum
0.66 oz (20 ml) honey syrup, 3:1
0.5 oz (15 ml) lime juice

DAIQUIRI
2 oz (60 ml) light rum
0.66 oz (20 ml) lime juice
0.33 oz (10 ml) rich syrup

MOJITO
2 oz (60 ml) light rum
1 oz (30 ml) lime juice
0.5 oz (15 ml) rich syrup
10-12 mint leaves
Splash of soda water

PINA COLADA

2 oz (60 ml) light rum
1.5 oz (45 ml) coconut water
1 oz (30 ml) pineapple juice
3-4 chunks pineapple
2 tsp caster sugar

CAIPIRISSIMA
2 tsp white sugar
1 whole lime
2 oz (60 ml) light rum

CARIBENO
2 oz (60 ml) light rum
4 oz (120 ml) coconut water
0.25 oz (7.5 ml) lime juice
0.25 oz (7.5 ml) Demerara syrup

CUCUMBER COLLINS
Cucumber Collins
Cucumber, muddled
2 oz (60 ml) light rum
0.75 oz (22.5 ml) lemon juice
0.5 oz (15 ml) simple syrup
2 oz (60 ml) soda water

CABLE CAR
Cinnamon sugar, rim
1.5 oz (45 ml) light rum
1 oz (30 ml) lemon juice
0.75 oz (22.5 ml) spiced orange oleo

COQUITO (Yields approx. 1L)
300 evaporated milk
300 cream of coconut
1 tsp vanilla extract
1 cinnamon stick
1.5 tsp nutmeg
1 star anise
1 cloves
330 puerto rican rum

Daiquiri 1 (my favourite)
2 oz rum, 2/3 oz lime juice, 1/2 oz simple syrup

Daiquiri 2 (sweeter)
2 oz rum, 3/4 oz lime juice, 3/4 oz simple syrup

Daiquiri 3 (more sour)
2 oz rum, 7/8 oz lime juice, 3/4 oz simple syrup

SPICED ORANGE SYRUP
1. Peel orange and weigh
2. Add weight in sugar
3. Leave 12+ hours to extract oils
4. Add vanilla, cinnamon and nutmeg
