Ingredients
For the apple filling:
• Apples – 900 g (about 6 medium)
• Granulated sugar – 60 g (½ cup UK / ½ cup US + 1 tbsp)
• Brown sugar – 40 g (3 tbsp UK / 3 tbsp US)
• Lemon juice – 15 ml (1 tbsp / 1 tbsp US / 1 tbsp UK)
• Mixed Spice -    • British Mixed Spice: Classic Blend for Tra...  
• Ground cinnamon – 1 tsp (3 g) If no mixed spice
• Ground nutmeg – ¼ tsp (0.5 g) If no mixed spice
• Cornflour (cornstarch) – 15 g (1 tbsp / 1 tbsp US / 1 tbsp UK)
• Water – 30 ml (2 tbsp / 2 tbsp US / 2 tbsp UK)
For the cobbler topping:
• All-purpose (flour/plain) – 180 g (1 ½ cups UK / 1 ½ cups US)
• Baking powder – 2 tsp (8 g)
• Salt – ¼ tsp (1 g)
• Granulated sugar – 50 g (3 tbsp UK / 3 tbsp US)
• Unsalted butter (cold, cubed) – 90 g (6 tbsp / 6 tbsp US / 6 tbsp UK)
• Milk (or buttermilk) – 120 ml (½ cup UK / ½ cup US)
• Vanilla extract – 1 tsp (5 ml)
Optional topping:
1 tbsp demerara or brown sugar for sprinkling.

Set oven to 180 °C (350 °F).
Bake 35–40 minutes until the top is golden brown and the fruit is bubbling.
