Ingredients
Set A – Grilled Liempo (Marinate)
½ Kg Liempo
2 Tbsp Fish sauce
¼ Cup Calamansi juice
Set B – Curing
1 Kg Tuna, cut into cubes, seasoned with salt
Set C – Kinilaw Sauce
¼ Cup Ginger, minced
½ Cup Onion, sliced
2 Pcs Red chili, chopped
1 Cup Vinegar
1 Tbsp Fish sauce
1 Tsp Maggi Magic Sarap
½ Tbsp Sugar
2 Cups Cucumber, cubed
½ Cup Coconut milk
½ Cup Onion leeks, chopped
Set D – Kilawin
½ Cup Onion, sliced
¼ Cup Vinegar
1 Tbsp fFish sauce
1 Tbsp Sugar
Half of the grilled pork, chopped
Set E – Garnish
Onion leeks
Calamansi
