Описание: Lentil rice pilaf - Mujjadara

Lentil rice pilaf, or mujjadara, is a powerful combinations of bone broth, rice, and lentils, it is a satisfying and nourishing meal all by itself,  served with a scoop of yogurt and a chopped cucumber and tomato salad.   A meatless dish, Arab Christians often eat this during Lent in Palestine.
Ingredients

1 cup fried onion
2 Tbsp extra virgin olive oil
1 cups rice
1 cups red lentils with skin
2 cups chicken stock
2 tsp salt
1/2 tsp pepper

Method:

The night before, pick through your lentils and then place them in a bowl of water overnight.  Boil it in the morning.
Rinse rice well, until the water runs clear.  Drain.  Rinse and drain lentils
Add oil in the pot. Crush onions before putting it in the pot. Add chicken stock.
Bring stock to a simmer, and add rice and lentils. Add salt and pepper. 
Cook on high heat until all the water evaporates. Reduce the heat to low and tightly covered the pot and leave it for at least another 15 minutes. 
Serve with plain yogurt and a little bread and salad.
