Mujadara recipe with whole wheat burghul, sauteed onions, topped with pomegranate, lemon and oil vinaigrette. This Syrian recipe is a delicious Vegetarian dish that is so nutritious, delicious, and easy to prepare.
For Mudardara, we substitute the Burghul with white rice
The ingredients for this recipe are:
1 cup of lentil 200gr (soak in water over night)
1 cup of burghul 200gr (soak in water over night)
4 red onions, chopped in thin slices
1 pomegranate, separated into seeds
1 lemon juice
70 ml of olive oil
1 large spoon of cumin
1 small spoon of salt, black pepper
We drain, and clean each of the lentil and the burghul and put aside in separate bowls.
In a non stick pot, we add 1/2 of the olive oil and the onions and we Sautee for 7-10 minutes, till light brown on medium to high heat, then we put aside in a plate.
Into the same pot, we add the rest of the oil, then we add the Burghul and Sautee on low heat for 5 minutes. Then we add the lentil, into the same pot and add 2 measurements of water, same of that of the lentil, and we add the spices, and simmer on medium heat for 30 minutes, and once the water has been reduced and is as low as the lentil level, we lower the heat to low, cover the pot, and simmer for 5 - 10 minutes, then we close the heat and keep aside for 10-20 minutes, then we serve on a platter and enjoy.
The Mujadara is best served with the sauteed onions on top, alongside the pomegranate seeds, and a drizzle of olive oil and squeeze of lemon juice, with a side salad dish.
