If you know me you know I love anything in the vein of Cucina Povera, the Italian poverty food traditions that often include wild plants and mushrooms.
Pane cotto (literally cooked bread) is one of the most perfect examples I know of. This is simply a thick stew of stale bread, wild greens, a touch of tomato, finished with cheese and olive oil. The bread soaks up all the liquid and becomes like a soft dumpling.
There's as many variations for this as there are stars in the sky, and in the video I walk you through descriptions of a number of versions I found poking around my library at home. Some omit the greens, some omit tomato, some add potatoes or beans for extra heft.
With so few ingredients the quality of them is key here. I was really surprised to find that cheap French bread weighed less (3 times less) than good, homemade chunks of sourdough I got from my friend Hank Shaw.
