One of the all-time greatest sauces I know how to make, and something I relied on when food cost was high as it's so cheap to make. Lobster sauce is the most well-known, but what even a lot of chef's don't know is that you can use any crustacean shell here. Crab, crayfish, shrimp heads and shells-if it turns orange after it cooks and comes from the sea, it'll work just fine. I will add that heads are ideal here as they contain meat and fat that adds richness to the sauce.
And did I mention it's ridiculously cheap? To make this I went and bought a whole lobster, but switched gears when I noticed my local seafood shop had frozen lobster heads in the freezer which are worth their weight in gold. 4 lobster heads cost around $5. I will sell a bowl of pasta made with this sauce for at least 20, and this recipe will make about 8-10 portions. You do the math.
You can save shells from when you cook shrimp, crab or other shellfish too and keep them in the freezer until you're ready to make it.
