Ingredients
Paaye (bakray ke ya gaaye ke) – 4–6
Pyaaz – 3 bari, barik kati hui
Adrak lehsan paste – 2 tbsp
Dahi – 1 cup
Tel ya ghee – ½ cup
Haldi – 1 tsp
Lal mirch powder – 1½ tsp (taste ke mutabiq)
Dhaniya powder – 2 tsp
Zeera powder – 1 tsp
Garam masala – 1 tsp
Namak – hasb-e-zaiqa
Sabit garam masalay:
Tez patta 2
Laung 4–5
Kali mirch 8–10
Badi elaichi 1–2
Hara dhaniya, adrak (julienne), hari mirch – garnish ke liye
👩🍳 Tareeqa
Paaye saaf karna:
Paayon ko achi tarah dho kar 2–3 martaba ubal lein, pani phenk dein (smell kam ho jati hai).
Bhuna masala:
Degchi mein tel/ghee garam karein, pyaaz daal kar golden brown karein.
Adrak lehsan paste daal kar khushboo aane tak bhunein.
Masalay & dahi:
Haldi, lal mirch, dhaniya, zeera daal kar thora bhunein.
Phir dahi daal kar achhi tarah bhunai karein jab tak tel alag na ho.
Paaye dalna:
Ab paaye aur sabit garam masalay daal dein.
Thora pani daal kar slow flame par 2–3 ghantay pakaein
(ya pressure cooker mein 45–60 min).
Finishing:
Jab gravy gaadhi aur paaye naram ho jayein, garam masala chhirak dein.
Hara dhaniya, adrak, hari mirch se garnish.

Naan / khameeri roti ke saath
Side mein lemon wedges aur hari chutney
