Roast Pear & Citrus Syrup Cocktails - Using Rye, Gin, Cognac, & Grappa

I made this amazing syrup using Roast D'Anjou Pear, Lemon Oleo Saccharum, and just a pinch of Ground Cardamom. I made an Oleo Saccharum using the peels of 4 lemons and 1 Cup of Sugar. I cored, quartered, & roasted 4 D'Anjou Pears, peeled off the skins, blending and straining the fruit. I mixed one cup of the Roast Pear Puree with the Oleo Saccharum, adding in a pinch of Ground Cardamom.
This syrup was then used to create a few new cocktails using some of my leftover experimental booze to amazing results. These cocktails represent some of my absolute favorites, a melange of crazy experiments involving Goat Cheese and Italian Pork Fat, some of which are just as delicious without the crazy booze.
