Ingredients:
Semiya / Vermicelli – 1 cup (Unroasted)
Sugar –3/4 cup (However, this won't be as sweet. If you want it to be sweeter, add 1 to 1 1/4 cup of sugar...water same)
Milk – 4½ cup
Sabudana / Sago – ¼ cup
Ghee
Cashew nut
Raisins
Cardamom powder
Steps:
Add sabudana and ¾ cup water in a pan.
Bring it to a boil and reduce the flame to low.
Cover and cook till it is ¾th cooked.
Switch off and set aside.
To caramelize the sugar, heat a heavy bottomed pan and add sugar.
Wait for the sugar to melt on low heat and turn golden brown. Keep stirring.
Add ½ cup water. The sugar syrup will solidify immediately.
Increase the flame to medium.
Keep stirring till it dissolves and gets mixed well.
Add milk and bring it to a boil.
Heat ghee in a pan and add semiya.
Keep stirring till it turns golden.
Add the milk mixture to semiya.
Increase the flame and bring it to a boil.
Add cooked sabudana.
Cook semiya stirring.
Add cardamom powder.
Switch off.
It will thicken further on cooling.
Heat ghee in a pan and roast cashew nuts till golden.
Add raisins and roast well. You may also add dates.
Add this to the payasam.
Enjoy the semiya payasam.
