HOW TO ROAST A LEG OF LAMB - GARLIC AND ROSEMARY
I always appreciate the opportunity to sink my teeth into a new recipe I've yet to attempt. Today I'm trying out a 6lb. roasted leg of lamb studded with garlic!
This leg has been de-boned. I removed the fell and some fat from the leg before I began to season it. My seasonings included a simple blend of garlic cloves, rosemary sprigs, salt, pepper, and olive oil. I created divots in the flesh with a pairing knife and studded the lamb meat with cloves of garlic. Next I brushed the leg with olive oil and seasoned with the remaining herbs and spices.
It's important to use butcher's twine to wrap up your leg once it's seasoned. This will ensure the protein cooks evenly.
I decided to make some sandwiches afterward where I took the lamb meat and mixed it with fresh squeezed lime and a cilantro crema. I stuffed the mix into a poppy seed long roll and enjoyed the fruits of my labor!
