Finished with chaat masala and crushed pepper, every bite is packed with flavour and texture.
This chaat is perfect for entertaining, festive spreads, or when you’re craving classic Indian street food with a homemade touch. The tikkis are crisp on the outside, soft on the inside, and the kala chana adds a hearty, protein-packed twist.

🌟 Ultimate Kala Chana Tikki Chaat
Crispy shallow-fried tikkis made with spiced kala chana and potatoes, layered over yogurt and finished with classic chaat toppings. Comforting, crunchy, tangy, and absolutely addictive.
⏱ Prep Time
Soaking: Overnight
Active Prep: 30 mins
Cooking Time: 35–40 mins
🍽 Serves
4–6
🫘 Ingredients
Kala Chana (Black Gram)
1 cup kala chana, soaked overnight
Water, as needed
Salt, to taste
Kala Chana Curry
2 tbsp oil
1 cup chopped onion
2 tbsp chopped green chillies
1 tbsp ginger & garlic paste
1 tbsp mustard seeds
1 tbsp garam masala
½ tsp red chilli powder
½ tsp turmeric powder
1 tbsp crushed black pepper
Salt, to taste
½ cup chopped coriander
Tikki Mixture
500 g potatoes, boiled & mashed
5 tbsp cooked kala chana (from the curry, cooled)
Coating
½ cup corn flour
1 tsp chaat masala
½ tsp salt
For Shallow Frying
Oil, as needed
For Serving
Sweet or salted yogurt
Extra kala chana curry
Chopped onion
Pomegranate seeds
Sliced green chillies
Tamarind chutney
Green chutney
Fresh coriander
Crushed pepper
Chaat masala
👩🍳 Method
1. Cook the Kala Chana
Drain soaked kala chana and add to a pressure cooker with salted water.
Pressure cook for 15 minutes.
Once safe to open, reserve the kala chana and 1 cup of the cooking liquid.
2. Prepare the Kala Chana Curry
Heat oil in a pan.
Add chopped onion and green chillies; sauté until soft.
Add ginger & garlic paste and sauté well.
Add mustard seeds, garam masala, red chilli powder, turmeric, and crushed pepper.
Sauté until fragrant.
Add cooked kala chana, salt, and the reserved cooking liquid.
Cook for 10 minutes until slightly thick.
Stir in chopped coriander, turn off heat, and allow to cool.
3. Make the Tikki Mixture
Mash boiled potatoes.
Add 2 tbsp cooled kala chana, mash and mix.
Add 2 more tbsp, mash again.
Add the final 1 tbsp, mix well.
For best results, chill this mixture before shaping.
4. Shape the Tikkis
Form the mixture into patties.
Use gloves or lightly grease hands with oil for easy handling.
5. Coat & Fry
Mix corn flour, chaat masala, and salt.
Lightly coat each tikki in the spiced corn flour.
Heat oil on a pan or tava.
Shallow fry tikkis until crisp on one side, then flip and cook the other side.
Drain on kitchen towel.
🥣 To Assemble the Chaat
Spread yogurt on a plate.
Place hot tikkis on top.
Spoon over kala chana curry.
Top with chopped onion, pomegranate seeds, sliced green chillies, and coriander.
Drizzle tamarind and green chutney.
Finish with crushed pepper and chaat masala.

Serve immediately for the best contrast of crispy tikkis and cool yogurt.
