Shami Kebab is a traditional Pakistani kebab made with beef and chana dal, flavored with aromatic whole spices.
The name “Shami” comes from “Shaam,” which means evening, as it is often served as a snack or dinner item.
These kebabs are delicious with green chutney, sliced onions, roti, or naan, perfect for Ramadan, family gatherings, or any special occasion.

Ingredients:
Beef – 3 kg
Ghee – 3 tbsp
Onions (sliced) – 3 medium
Ginger garlic paste – 3 tbsp
Green chili paste – 3 tbsp
Turmeric powder – 1 tsp
Carom seeds (ajwain) – ½ tsp
Black peppercorns – 1 tsp
Mace (javitri) – 1 piece
Black cardamom – 3
Cinnamon stick – 1
Cloves – 1 tsp
Caraway seeds – 1 tsp
Coriander seeds – 1½ tbsp
Bay leaves – 7
Kashmiri dry red chilies – 7
Coriander powder – 1½ tbsp
Red chili powder – 1 tbsp
Chana dal (soaked) – 500 grams
Yogurt – 1½ cup
Meat tenderizer powder – 1 tsp
Salt – to taste
Hot water – as needed
Oil / Ghee – for sautéing
For second style / variation:
Onion (chopped) – 3 medium
Green chilies (chopped) – 7
Coriander leaves – 1 cup
Egg whites – 3
Water – 2 tbsp
👩🍳 Directions:
1.Heat ghee in a pan and sauté sliced onions until translucent.
2.Add beef and all spices.
3.Add soaked chana dal and yogurt.
4.Add a little hot water
5.Close the lid and pressure cook.
The number of whistles depends on the type of meat.
6.After cooking, simmer until the water is completely dry.
7.Let the mixture cool slightly.
8.Blend the mixture using a hand blender.
9.If you do not have a hand blender, use a food processor or mixer grinder.
10.Make balls from the mixture.
11.Press the balls gently with both hands and shape the edges smoothly.
12.Dip each Shami Kebab in a slurry of egg whites and water.
13.Place in the pan and cook on medium heat on both sides until done.
Second style / variation:
13. Mix chopped onions, green chilies, and coriander into the prepared mixture.
14. Make balls from the mixture.
15. Dip each ball in the egg white slurry, then place in the pan and cook on medium heat until done.
Serve hot with green chutney, sliced onions, roti, or naan.
