Описание: Leave it to the Italians, to do pork right. This is the ultimate Italian Comfort Food. Don't be intimidated by the recipe. I show you all the steps in this ASMR style video. You will love it, I guarantee it.

Pappardelle with Braised Pork Sugo

2 1/2-3 pounds boneless pork butt or shoulder, cut into 1 inch pieces
salt and pepper to season
3 tablespoons olive oil
1 large onion, diced
1 large carrot, diced
1 large stalk of celery, dice
4-5 garlic cloves, chopped
28 ounces crushed tomatoes, canned or homemade
1 ½ cups dry red wine
1 ½ cups chicken stock
6 fresh sprigs thyme
2 fresh sprigs oregano
2 fresh sprigs rosemary
1 fresh sprig sage
1 teaspoon red pepper flakes
½ cup heavy cream
Fresh grated Parmesan
1 pound pappardelle pasta, cooked according to package

Place the pork pieces in a bowl and season generously with salt and pepper.
In a large Dutch oven, heat olive oil over medium-high heat. Add pork and sear on all sides, about 5-7 minutes.
Remove pork with slotted spoon, transfer to a plate and set aside.
Add in the diced onion, carrot and celery to the Dutch oven, cook and stir for about 5 minutes. Add in garlic and cook for another minute.
Add in the crushed tomatoes and scrape the bottom of the pan with a wooden spoon to loosen up any brown bits.
Pour in the red wine and chicken stock and stir. Add the pork back in and bring liquid to a boil.
Tie up the thyme, oregano rosemary and sage with kitchen twine and add into the pot along with the red pepper flakes.
Cover and transfer to a preheated 325 F oven and cook for 2 ½- 3 hours.
When pork is fork tender, remove from oven and let cool for 10 minutes. Shred the pork directly in pot using two forks to
pull the meat apart or remove meat to a bowl and shred in bowl and return to pot and stir to combine.
Pour in the heavy cream and season again to taste with salt, pepper and red pepper flakes.
Stir to combine and serve over the cooked pappardelle pasta. Top with freshly grated parmesan cheese.
