INGREDIENTS (for 4 sandwiches)
• 3/4 cup Ketchup
• 1/3 cup Molasses
• 1 Small Onion
• 3 tbsp. Worcestershire Sauce
• 3 tbsp. Dijon Mustard
• 3 tbsp. Apple Cider Vinegar
• 1.5 tbsp. Honey
• 1 tbsp Smoked Paprika
• 6 Boneless Skinless Chicken Thighs
• Green Cabbage (or coleslaw mix) (about 3 cups worth)
• 1/3 cup Mayo
• Apple Cider Vinegar (to taste, a few tablespoons)
• Salt
• Pickles (any kind you like)
• 1 Red Onion
• 4 Burger Style Buns (or whatever bun you like)
METHOD
• Preheat your oven to 425f with the oven rack in the middle
• Cover a medium sized pan in parchment or foil for easy clean up
• Lay out your chicken thighs in a single layer and season both sides with salt and pepper
• Set chicken aside while your oven comes to temp and start making your barbecue sauce
• In a medium sauce pan add your ketchup, molasses, onion, Worcestershire sauce, dijon, apple cider vinegar, honey, smoked paprika, and finely chopped chipotle.
• Put the pot on the stove and bring it to a simmer. We are going to reduce the sauce slightly.
• By now, your oven should nearly be up to temperature. Put the chicken in and cook 15 minutes. After 15 minutes, remove the chicken and use tongs or a fork to dip each piece of chicken in the barbecue sauce.
• Return the pan of chicken, now coated in sauce, to the oven to bake for another 10 minutes. We want to cook this chicken to 185f.
• Time to make the coleslaw. Mix your mayo with 2 tbsp apple cider vinegar and 1/2 tsp honey. Season with salt. Whisk well.
• Shred your cabbage finely and add to the bowl. If you’re using coleslaw mix, just add it right to the bowl.
• Toss really well and set aside. Coleslaw should sit at least 10 minutes before serving.
• Prep the rest of your toppings. Thinly slice red onion. Slice pickles.
• Once the chicken is done, let it rest 5 minutes. You can serve the chicken whole on the bun or chopped.
• Toast the buns and build the sandwich!
• I like to put the onion and pickles on the bottom, top with the chicken, lots of extra sauce, coleslaw, and the top bun.
