Savory Cornbread & Corn Butter [Quick and Easy]

This video demonstrates how to make savory cornbread from scratch. Simple cornbread and sautéed corn with a little bit of spicy heat and sweetness will be a perfect harmony of your tastebud. Purchasing a cornbread from a store is a waste of your money because there are so many easy cornbread recipes out there including this one. Try it and you will be surprised how well the balanced flavor of sweetness and savouriness goes well in American classic cornbread.
Ingredients:
-Cornbread
Cornmeal 180g
AP flour 180g
Unsalted butter 120g
Sugar 100g
Salt 1 Tbsp
Baking powder 1 Tbsp
Eggs (large) 2 ea
Buttermilk 1 1/2 cup
-Sauteed Corn
Sweet corn (canned) 3 Tbsp
Shallot (or onion, chopped) 30g
Red Chili 1/2 ea
Vegetable oil 1/2 Tbsp
Butter 1 Tbsp
Cilantro 5 leaves
Directions:
-Cornbread
1. Preheat the oven at 400 deg F with the cast iron skillet in it.
2. Melt butter in a saucepan.
3. Mix in dry ingredients in one bowl: AP flour, sugar, salt, baking powder, cornmeal)
4. Mix 2 eggs, buttermilk, and melted butter in another bowl
5. Add liquid bowl to the dry bowl to mix the batter.
6. Spray some cooking oil to the preheated skillet and pour the batter to it.
7. Bake in the oven for 25 minutes.
8. Cool it and flip the cornbread on a wire rack.
-Corn Topping
1. Start cooking shallot (onion) and chili on medium heat with canola oil.
2. After 1 minute, add corn and season with salt and pepper.
3. Add butter and mix everything.
Final product:
1. On a pan toast the cornbread slices with butter
2. Place the toasted cornbread on a plate and place the corn on top of the cornbread.
3. Add cilantro to garnish.
