CREAMY CLAM CHOWDER
Ingredients:
1 medium onion, chopped
2 celery ribs, diced
1 cup leeks, sliced thinly
3 cloves garlic, minced
1/4 cup all-purpose flour
1/4 cup butter
3 cups potatoes diced
2 1/2 cups chicken stock
2 tsp fresh thyme, chopped
1 pc dried bay leaf
2 cans (142g each) chopped clams drained
(reserve 1 cup clam juice)
2 cups whole milk
1 cup heavy cream
1 cup cooked bacon, chopped
sliced green onions for garnish, optional
Instructions
Heat a large pot, melt butter over medium heat.Add onion and celery and sauté about 4-5 minutes, until soft. Add the leeks and garlic and cook for 1 minute. Add in flour and stir to coat vegetables. Cook 2 minutes stirring often.
Add chicken broth, milk, clam juice, thyme and diced potatoes. Stir well, then bring to a boil.
Cover and simmer for 10-12 minutes or until potatoes are fork tender.
Add clams, bacon, bay leaf and pour in heavy cream and season with salt and pepper stirring well to combine.
Cook over medium heat, stirring often, about 5 minutes, or until heated through and thickened to desired consistency.
Sprinkle with sliced green onions.
Serve hot and enjoy!
