Time for me to show you how to make Mediterranean chicken thighs in a skillet that have a golden, crispy, slightly charred exterior skin to give them a smokey flavor, with a tender, juicy interior that is extremely pleasing to the touch and your palette. This Mediterranean chicken recipe can be paired with basmati rice, my homemade hummus recipe, or my Mediterranean cucumber tomato salad recipe, with your choice pita or lavash bread to make it a complete meal. Ingredients:
Chicken Thighs
Ground Turmeric
Garlic Powder
Coriander Seed
Ground Cumin
Smoked Paprika
Black Pepper
Sea Salt
Ground Cinnamon
Olive Oil
Yellow Mustard
Parsley
Lemons
Exact Measurements: (For Seasoning)
2 teaspoons Sea Salt
2 teaspoons Black Pepper
2 teaspoons Garlic Powder
1 Tablespoon Smoked Paprika
1 Tablespoon Ground Cumin
2 teaspoons Turmeric Powder
2 teaspoons Ground Cinnamon
2 teaspoons Coriander Seed
Exact Measurements: (For Chicken)
3 Pounds Chicken Thighs (Bone-In, Skin On)
1/4 Cup Fresh Lemon Juice
1/4 Olive Oil
1/4 Cup Yellow Mustard
2 Tablespoons Fresh Parsley (Flat Leaf)
3 Tablespoons Olive Oil (For Skillet)
Instructions:
Clean the chicken thighs thoroughly and pat dry. Place chicken into a large glass bowl. Add the seasonings to a small bowl. MIx well to incorporate. Add the lemon juice, olive oil, mustard, parsley, and seasonings to the chicken. Toss well to evenly coat. Cover the bowl with saran wrap. Place in the fridge to marinate (for best results overnight) Remove the saran wrap. Transfer the chicken onto a plate. Add the olive oil to the skillet. Swirl the olive oil to evenly coat the bottom of the skillet. Add the chicken thighs. Brown on both sides. Transfer to a serving plate.
