📌 RECIPE CARD

Chicken Kabuli Pulao
Ingredients:
• Whole chicken: 1
• Rice: ½ kg
• Onions: 2
• Whole black pepper: 1 tablespoon
• Crushed cumin seeds: 1 tablespoon
• Salt: 2 teaspoons
• Garlic: 1 whole bulb
• Whole black pepper: 1 teaspoon
• Ginger: 1 piece
• Carrots: ½ kg
• Sugar: 2 tablespoons
• Raisins: ½ cup
• Orange peel (julienned): ½ cup
• Cooking oil: ½ cup
Method:
Wash the whole chicken thoroughly. Add 4 glasses of water, 1 teaspoon whole black pepper, 1 teaspoon salt, 1 onion, a piece of ginger, and garlic cloves. Cook until the chicken becomes tender and about 2 glasses of stock remain. Strain the stock and set the chicken aside.
Heat oil in a pan and fry the chicken until lightly golden. Remove and set aside. In the remaining oil, fry the onions until golden, then add the reserved stock. Add the rice and mix well. Sprinkle in the whole black pepper and cover to cook on low heat (dum).
In a separate pan, heat 1 tablespoon of oil and lightly cook the carrots, sugar, and raisins. Spread this mixture over the rice. Place the fried chicken on top, cover, and turn off the heat. Allow it to rest for a few minutes before serving.


Murgh Malai Masala
Ingredients:
• Boneless chicken pieces: 1 kg
• Cream: 1 cup
• Butter: 50 g
• Crushed black pepper: 1 tablespoon
• Green chilies, chopped: 2 tablespoons
• Fresh coriander: 1 bunch
• Garlic, chopped: 2 tablespoons
• Lemon juice: 4 tablespoons
• Roasted crushed cumin: 1 tablespoon
• Whole coriander seeds: 1 tablespoon
• All spice powder: 2 teaspoons
• Papaya paste: 2 tablespoons
• Vinegar: 2 tablespoons
• Soya sauce: 2 tablespoons
• Cooking oil: 2 tablespoons
Method:
Heat the butter and oil in a pan and lightly fry the chopped garlic. Once fragrant, turn off the heat. Remove the pan from the stove and transfer the mixture to a bowl.
Add all the remaining ingredients and spices to the bowl and mix well. Apply this marinade evenly to the chicken pieces and let them rest for 30 minutes.
Wrap the marinated chicken in foil and bake at 180°C for 30 minutes. Finally, remove the foil and grill for an additional 10 minutes until lightly browned.
