Enjoy a delicious and restaurant-style meal with Chicken Steak with Mushroom Sauce & Dum Kabab, prepared in Mehboob’s Kitchen on Masala TV.
Dum Kabab:
Ingredients:
Minced beef – ½ kg
Black cumin seeds – ½ tsp
Poppy seeds – 1 tbsp
Desiccated coconut (ground) – 1 tbsp
Almonds (ground) – 2 tbsp
Chickpea flour (besan) – 50 g
Salt – 1 tbsp
Turmeric powder – ¼ tsp
Red chilli powder – ½ tsp
Raw papaya paste – 1 tbsp
Garam masala (ground) – 1 tsp
Ginger paste – 1 tsp
Garlic paste – 1 tsp
Fried onions (ground) – from 2 onions
Yogurt – ½ cup
Clarified butter (ghee) – ½ cup
Fresh coriander (cilantro), finely chopped – 3 tbsp
Lemon – 1
Onion, finely chopped – 2
Fresh mint, finely chopped – 3 tbsp
Fresh ginger, finely chopped – 3 tbsp
Method:
Grind all the spices together with the onions and mix them thoroughly into the minced beef. Marinate for 3 hours.
Heat ghee in a pot, add the marinated minced beef, and sauté well until properly cooked.
After frying the mince, give it dum (smoke) using hot charcoal at the end.
Optional baking method:
Grease a baking tray and spread the minced meat evenly in it.
Make a small space in the center, add some ghee, and give charcoal smoke.
Mix the mince well by hand with the ghee, spread it evenly again, and bake in a preheated oven at 190°C for 50 minutes.
Chicken Steak with Mushroom Sauce:
Ingredients:
Chicken breast fillets – 2
Salt – to taste
Black pepper powder – ½ tsp
Garlic powder – ½ tsp
Lemon juice – 1 tbsp
Olive oil or butter – 2 tbsp
Method:
Flatten the chicken breast fillets slightly. Season with salt, black pepper, garlic powder, and lemon juice.
Heat oil or butter in a pan and cook the chicken steaks on medium heat until golden brown and fully cooked on both sides. Remove and set aside.
In the same pan, melt butter and add chopped garlic. Sauté until fragrant.
Add sliced mushrooms and cook until soft and lightly golden.
Sprinkle flour over the mushrooms and mix well. Cook for 1 minute.
Gradually add milk or cream, stirring continuously to avoid lumps.
Season with salt, black pepper, and mustard paste if using. Cook until the sauce thickens.
Place the chicken steaks back in the pan, spoon the mushroom sauce over them, and simmer for 2–3 minutes.
Serve hot with mashed potatoes, rice, or sautéed vegetables.
