Let’s finish the job by making homemade crunchy, crispy, piccalilli with an extra zip from daikon raddish, turnip and Chinese hot mustard powder.
You may prefer a chili dog. Respect. Let’s make chili that sticks to the dog by slow cooking a pot of red with blended New Mexican red chilies and mulatos for richness. Adding a couple tablespoons of corn meal will cook down and thicken the chili as it cooks. I’ve had the famous chili dogs at Ben’s Chili Bowl in Washington, D.C. Ever since I had a Ben’s Famous Half Smok’d, I add cinnamon when I make hot dog chili which works extremely well in real Mexican chili dishes all the time so why not here. 250-270g ripe sourdough starter
35g honey
1 egg
464g bread flour
12g salt
60g softened butter

1/2 cauliflower
1 jicama
1 turnip
1 daikon raddish
1 carrot
1 lg sweet onion
2 shallots
2 jalapeños
1” turmeric root
1/4c kosher salt
1 c cider vinegar
2c white vinegar
1 c water
3/4c sugar
1/4c molasses
3 whole cloves
2T mustard seed
1 1/2t celery seed
1T hot mustard powder
2T cornstarch
1/4c water

HotDog Chili
1T bacon grease
1 shallot
1 lg yellow onion
1 jalapeño
2 garlic cloves
1” cinnamon stick
3 bay leaves
1 1/2lbs 80/20% ground beef
1t kosher salt
1/4t black pepper
1/4t oregano
2 New Mexican red chiles
1 Chile mulato
3c water
2T cornmeal
1 15oz can pinto beans
6oz dried will yield the same as a 15oz can

HotDog Slaw
1 head cabbage
1lg carrot
1/4c cider vinegar
1/2c mayonaise
2T honey
1t kosher salt
1/4t black pepper
1t celery seeds
1t mustard powder
