Big Beef broth flavor quickly, Vietnamese spices, roasting ginger and onion black first. Roasting the veg then using the broiler got that char roasted flavor in doors, 3 1/2 hours total to delicious beef broth is possible.
The key is roasting the bones quickly boosting beef flavor and gently washing the bones after to keep the broth clean and clear without too much fuss.
Aromatic spices include star anise, cinnamon and black cardamom. You want the smokey flavor of black cardamom never the soapy green cardamom, coriander seed and clove are optional but we added them.
This broth is traditionally seasoned with a Knorr vegetable broth product heavy in mushroom flavor. For the most authentic pho, if you’re making it often, I would get some. But if you’re gonna make pho on occasion like us, adding a few dried shiitake mushrooms can make up some of that difference.
We also opted to add a carrot to the broth in an effort to reduce the sugar in the seasoning but we still’s did add some Chinese rock candy, made from sugar cane.

2 beef marrow bones
1 beef shank
2 beef ribs
6oz beef sirloin/tenderloin
4-5 garlic cloves
1 onion
4” ginger
2 green onions
1 lg carrot
2 fennel tops
4-6 dried shiitake mushrooms
1 bay leaf
4-5 star anise
2 black cardamom
1/8t coriander seed
2” cinnamon
1T kosher salt
1t MSG
10g rock sugar
1T fish sauce
14oz rice stick noodles
8oz bean sprouts
Garnish
red onion
cilantro
lime
diced chili
Thai basil
Hoisin sauce
