I spent a week in Austin, Texas and consumed every single BBQ item the city had to offer. So today, I’m going the opposite route. Often times I get comments and DM’s about doing a vegan recipe. Well I finally broke down and tried one. And I must say, it came out pretty good! Maybe it will inspire you to try a #MeatlessMonday (yes I realize it’s Wednesday but for the sake of the hashtag, just go with it!) This simple sandwich is completely vegan down to the bread and has a decent amount of protein thanks to the chickpeas and black beans. And with some vegan mayo coleslaw, it packs the perfect punch for your tastebuds to approve.
