Mint-Coriander Pulao, the green pulao, is one of the simple and flavourful one pot meals that can be enjoyed as lunch or dinner. Also, it is referred as khara bath in some parts of South India. The green paste proportion along with the small quantity of lemon juice and slices of vegetables combine well while cooking in low flame to get the subtle aromatic delicious meal in a pot. Any type of rice can be replaced with basmati rice and as indicated, the right quantity of water allows the rice to cook to its correct consistency along with the vegetables. The mix of dry fruits provides a simple sweet touch with the crunchy vegetables to enjoy as a wholesome delicious meal.

Ingredients:
1 cup basmati rice
4 green chillies
1/4 cup chopped mint leaves
1/4 cup chopped coriander leaves
1/2 tsp lemon juice
2.25 cups water
3 tbsp oil
1/2 tsp jeera
1 bay leaf
1 inch cinnamon
2 cardamom
1 star anise
1 cup sliced onion
1 tbsp ginger & garlic paste
1/2 cup sliced tomato
1/8 tsp turmeric
1/4 cup chopped carrot
1/4 cup chopped beans
1/4 cup chopped potato
1/4 cup chopped peas
1.5 tsp salt
1 tsp ghee
Good to serve about 3 people.
