Joanna visits with Catherine Webster, Simpson County Extension Agent for 4-H Youth Development to talk about the 4-H Country Ham Project.
Registration is underway across Kentucky for the 4-H Country Ham Project. In 2020, around 800 youth throughout the state will learn how to cure hams through the 4-H Country Ham project. Some of these youth will cure hams in ham houses located at their Extension Office, while others will travel to one of the country ham processing facilities throughout the state. In Simpson County, 4-H members go to Clifty Farms in Scottsville to learn the curing process and cure two hams. In addition to the curing process, the project also requires participants to give a 3-5 minute speech on a topic relating to country hams. Last year participants ages 9-13 gave a speech on “how to store & cook their hams” once they brought them home from the KY State Fair. With the Thanksgiving & Christmas holidays upon us several people might be planning to have ham for their holiday meals. One easy way to prepare & serve country ham for your holiday meals is to bake country ham slices (I’m going to further explain this on the show). If you have youth ages 9-18 that would like to enroll in the KY 4-H Country Ham Project for 2020 contact your local Extension Office.
