. CHICHARROS WITH ONION SAUCE
5 lbs chicharros cleaned (frozen or fresh)
1 tbsp salt
1 cup corn flour ( white or yellow)
1 cup canola oil
Water to cover fish
Clean fish by removing the gills. Wash them over cold running water . Place them in a bowl, cover them with water and add salt to the water. Let them sit in water for up to 1 hour. In a plate, add flour and roll fish coating all sides with flour. In a large skillet, add oil. When oil is hot, place fish in oil frying both sides until golden and crispy. Remove fish to a plate with a paper towel to drain excess oil. Serve boiled potatoes and onion sauce.
ONION SAUCE (CEBOLADA)
2 large onion sliced half moon
1 cup bell peppers chopped
1 can diced tomatoes
¼ cup vinegar (any kind red or white )
2 tbsp garlic chopped
2 tbsp parsley chopped
1 tbsp pepper sauce
3 tbsp Portuguese olive oil
Water to thin out
Salt to taste
In a large skillet add olive oil, onion, garlic and bell peppers. Cook until they are soft on low heat. Add tomatoes,pepper,parsley and vinegar. Let cook for about five minutes. Taste for salt, and if it needs more liquid add water. Bring all to a simmer for about 5 minutes. Ready to serve over fish and potatoes
