Today’s menu is very authentic Japanese Escabeche, Mini Horse Mackerel Marinated with NANBAN Sauce.
This is the 2nd time to introduce NANBAN sauce, there is subtle difference between this and previous one and this NANBAN sauce is easier to make! Because of the effects of rice vinegar, you can even eat their bones if you want to increase your calcium intake!! :)

Ingredients (Serve for 2)
Horse Mackerel 300g/ 0.6lb/8pieces
Yellow onion (large)1/2
Carrot 1
Celery 1-2stalk
Salt
Soy sauce 60cc/ 1/4uscup
Rice vinegar 60cc/ 1/4uscup
Dashi stock 60cc/ 1/4uscup
Sugar 1 tbs
Rice flour/flour/starch
Lemon ½
Sesame oil
Direction
1. Clean horse mackerels by hand and wash clean. Sprinkle salt onto the fish and leave them for 15 min.
2. Cut/slice all vegetables.
3. Prepare NANBAN mixture and pour into the veggies’ bowl.
4. Wipe off the excess moisture of the fish and coat with rice flour of any flour you prefer.
5. Prepare a large frying-pan and pour sesame oil.
6. Fry the fish until nicely crispy and browned.
7. When the fish browned, let them dive into the NANBAN mixture and let them sit to soak for a few hours in the refridgerator with a food wrap.
