Todays video is 5 quick and easy meals that you can make during the weeknight and especially when you’re busy with work, or need to run your kids all around to practices and want to get in a meal beforehand. They are healthy, gluten free, and mostly dairy free! These are also all kid friendly meals as well, as all of my kids loved these meals and ate them on up! Red Pepper Casserole Recipe:
Ingredients Needed:
3 - 4 medium red bell peppers (or peppers of choice)
1 medium onion
2 garlic cloves
1 1/2 lbs ground beef
1 TBS Avocado Oil
1 TBS chili powder
1 TBS cumin
1 1/2 tsp sea salt (Celtic or Redmond)
1/2 tsp black pepper
15oz Tomato Sauce
2 cups cooked Quinoa (usually about one cup full for rice cooker)
1 can of black beans (drained & rinsed)
1 block of Monterey Jack Cheese
1. Preheat oven to 375
2. In a skillet, heat up some avocado oil (1 TBS or enough to coat bottom of pan)
3. Once skillet is hot, brown up the hamburger
4. While hamburger is browning, chop up your onion, garlic, and bell peppers
5. Once hamburger is browned, add in all of the seasoning: Chili Powder, Cumin, salt, and pepper. Get it coated on the hamburger and then add in the onion and bell peppers and cook until translucent
6. Add in the garlic and cook for 30 seconds or until fragrant
7. Add in the black beans, quinoa and tomato sauce
8. Toss to coat and put in a casserole dish
9. Cover the top with the Monterey Jack cheese and place in oven until cheese is nice and melted (about 20-25 minutes)
At this point you can cover with foil and put in fridge until ready to cook - if you want to prep this over the weekend - or create a freezer meal Once ready, I would recommend letting thaw out and then putting in oven with foil on for about 20 minutes - 30 minutes, or until cooked/reheated through. Then uncover and continue cooking until the cheese is nice and melted. If heating up from fridge, I would follow same steps as frozen.
Air Fryer Chicken Thigh Recipe:
With your choice of Chicken Thighs, coat both sides with Old Bay Seasoning, then throw in air fryer for 380 degree's for 25 Minutes. Make sure to place skin side down at first.
At 12 or 13 minutes, turn thighs over to skin side up to start their crisping.
Once the timer is up, check the thighs to make sure that they are done and the skin is crisp to your desired consistency. If needed, continue cooking for 2-3 minutes longer to get the skin nice and crisp.
