Welcome back to my Channel! Today’s Video is a New Easy Weeknight Meals, how to quickly and easily meal prep on Sunday for an easier week, and a healthy grocery haul for our Family of 5. Every one of these meals can be made gluten free and dairy free! Regardless of what you decide to do, they are all healthy and yummy recipes you must try! Chicken Pot Pie Recipe:
Ingredients Needed:
2 TBS Olive Oil
1 White Onion
3 garlic cloves
6 TBS Flour (I use Bob’s Red Mill Gluten Free Flour)
3 Cups of Chicken Broth (I use Kettle & Fire)
10-12oz frozen pea’s and carrots
2 Cooked chicken Breasts (I season mine with salt, pepper, and garlic to taste)
1 Pie Crust (I use Wholly Gluten Free Pie Shells)
1 TBS Butter (or less - we use Miyokos Butter)
Salt & Pepper to taste
Instructions:
Preheat oven to 425
Cook Chicken Breasts in skillet with avocado oil and cut up after completely cooled.
Finely Mince Onion and Garlic cloves
Heat up 2 tbsp olive oil in a nonstick pot
Once oil is hot, add in the onion and sauté until translucent
Add in the garlic and cook for 30 seconds until fragrant
Slowly add in the 6 TBS of flour to coat the onion and garlic pieces
Then slowly add in the Chicken broth, continually stirring and scraping up the flour
Once you’ve created more of a roux type consistency, you can then finish pouring in the rest of the chicken broth
Once all mixed in, let it simmer over low heat until it thickens
Once thickened to your liking, add in the frozen pea’s and carrots and then the chicken breasts
Season with salt and pepper to taste
Once the filling is complete, you will pull it off the stove and either pour into a pie dish, separate out into ramekins, or if it’s already in an oven safe dish, just roll out and place pie crust onto the pie filling.
Cut a little slit in the middle of the pie crust to allow the filling to expand and place thin pieces of butter on top.
Place in oven for 20-30 minutes until the filling is bubbling and the top is golden brown.
