Wholesome, hearty, and ready in under 30 minutes! 🌱 These flour-free lentil & roasted eggplant veggie patties are packed with plant protein, fiber, and flavor — and fried with just a hint of oil (or bake them for oil-free!). Crispy on the outside, tender inside, and paired with a cool garlic-dill yogurt sauce that’s the perfect finish.

✅ No flour, no excess oil
✅ Naturally gluten-light (use GF breadcrumbs to make it fully GF!)

Ingredients:
• 150g cooked lentils
• 1 eggplant (grated & squeezed dry)
• 1 onion, 1 carrot, 1 sweet pepper (all grated)
• 2 garlic cloves
• 50g oat flakes
• 50g whole-grain breadcrumbs
• Salt & pepper
• Sauce: yogurt + garlic + fresh dill
Method: Mix, shape, pan-fry 5 min/side (or bake at 200°C/400°F for 20 min). Serve with chilled yogurt-dill sauce!
