2 cups Gruyere Cheese (shredded)
1 1/2 Sweet Onion (sliced)
1/2 cup Vermouth
1/2 cup Beef Stock
Kosher Salt (to taste)
Ground Black Pepper (to taste)
Thyme - dried or fresh (to taste)
4 Tbsp Unsalted Butter- softened
2 slices bread of your choice
