Hey everybody, welcome to another edition of Cooking Bourdain. Be sure to subscribe and ring the bell to catch all the videos. Today we are making Grilled Cheese Sandwiches with Caramelized Onions. This recipe is from Appetites: A Cookbook, pick it up at the link in the description below. We will be using our homemade Mayonnaise. See the link in the top corner for the video.
Peel and finely slice 2 large white onions. In a large, heavy-bottom pan, heat 1 tablespoon of unsalted butter over medium-low heat. Add the onions. Season the onions lightly with salt and stir them around with a wooden spoon or spatula to evenly distribute the butter and break up the stacks of slices. Cook over medium-low heat, stirring occasionally, until the onions are nicely caramelized, 25 to 30 minutes. You can’t rush this process with high heat. Once the onions are caramelized, remove from the heat and let cool slightly.
With a butter knife, spread one side of each slice of bread with an even layer of mayonnaise. The brilliant Gabrielle Hamilton uses mayonnaise on the outside of her grilled cheese sandwiches, as do many diner cooks, and you should, too. It doesn’t brown as quickly as butter, so the sandwich needs far less babysitting in the pan, from which it emerges with an impressively even golden crust.
In a medium pan, heat a ½ tablespoon of butter over medium-high heat until it foams and subsides. Then place the bread, mayonnaise side down, in the hot pan. Top it with an even layer of grated sharp cheddar cheese. Scatter some of the onions over the surface of the cheese. Top this with another slice of bread, mayonnaise side up. After 2 to 4 minutes, flip the sandwich with a spatula. Let cook for another 3 minutes or so, then remove the sandwiches from the heat. Grilled cheese with caramelized onions. Ingredients:
Serves 2
3 tablespoons unsalted butter
2 large white or yellow onions, peeled and finely sliced Salt to taste
4 slices standard white sandwich bread (use Japanese milk bread if you have it)
3 to 4 tablespoons homemade Mayonnaise or store-bought mayonnaise
3 to 4 ounces best-quality sharp cheddar cheese, grated
