INGREDIENTS:
• 1.5kg Chicken Mince
• 1 Red Onion
• 1 Red Bell Pepper
• 5 Green Chillies
For the marinade:
• 2-3 Tbsp Olive Oil
• 3 Tbsp Garlic Ginger Paste
• 2 Tbsp Paprika Powder
• 2 Tbsp Ground Coriander
• 1 Tbsp Cumin Powder
• 1.5 Tsp Red Chilli Powder
• 1 Tsp Ground Black Pepper
• 1 Tsp Salt
• 1/2 Tsp Garam Masala
• 3 Spring Onion (chopped)
• 1 Tsp Tomato Paste
Adjust spices according to your liking.
Preparation:
• In a chopper, add cut onion, bell pepper, chillies and chop well.
• Transfer the mixture to a muslin cloth or fine strainer and squeeze out the liquid as much as you can.
• Add the chicken mince into a large bowl, add the squeezed mixture, olive oil, garlic ginger paste, spices, spring onions, tomato paste and mix well until ingredients are fully incorporated, cover and place in refrigerator for 2 hours or overnight.
• Drizzle some olive oil into a tray ( I used 2 glass trays, you can also use a baking tray) and brush evenly, this will prevent the kebabs from sticking to the tray.
• Add marinated chicken into the tray and spread evenly, brush the top lightly with some olive oil. Use a dough scraper to score straight lines.
• Bake at 180c in a pre-heated oven for 30-35 min or until cooked through and golden and crisp on top. Remove tray from oven and use the scraper to go over the lines while it's still hot (this will separate the kebabs and will make it easier to remove from tray)
