You and your family will love this Caramel Cheesecake. It is velvety smooth and tastes like caramel using the Dulce de Leche.
Ingredients:
10 ounces of Chocolate Animal Crackers
2 Tablespoons cocoa powder
6 Tablespoons melted butter
Mix all of these ingredients and place into your Springform Pan for the crust. Refrigerate while you are making the cheesecake.
Filling:
***Have everything at room temperature***
3 packages cream cheese (8 ounces each)
1/2 cup sugar
1 can of Nestle La Lechera Dulce de Leche (13.4 oz or 380g)
16 ounces sour cream
2 egg yolks (optional)
1/2 teaspoon salt (optional)
3 eggs
Mix your cream cheese and sugar together, this makes sure that your cream cheese is at proper temperature. If too cold it will not mix and become smooth.
Add in your Dulce de Leche and mix it up.
Add in your sour cream and 2 egg yolks and mix
Then add in your eggs one at a time.
Pour into your springform pan. I used a 9 inch pan.
Bake around 320F to 325F for 75 minutes.
Allow to cool for 90 minutes in the oven with the heat turned off.
When room temperature, cover with foil or plastic wrap and refrigerate overnight.
Optional but necessary Caramel Sauce:
1 stick of butter (4 ounces)
2/3 cup Light Brown Sugar - packed
2 Tablespoons corn syrup
1/2 teaspoon coarse grind salt (1/4 t table salt)
2/3 cup heavy cream
Slowly melt everything except the cream over low heat in a small pot.
When it is melted, let it bubble for 6 minutes.
Slowly pour in the cream and turn off heat.
Allow to cool, it will thicken as it cools down.
