Chili Recipe (From Laura In The Kitchen Cookbook)
2 TB Oil
1 1/2 lb. of lean ground beef
1 yellow onion diced
1 red bell pepper diced
1 jalapēno seeded and minced
3 garlic cloves minced
S & P
3/4 cup of lager style beer
2 TB chili powder
1 1/2 TB light brown sugar
2 tsp. ground cumin
1 tsp dried oregano
2 TB tomato paste
3 cups low-sodium beef broth
1 (15.oz) can black beans rinsed and drained
1 cup tomato puree
Heat oil in a large 3 qt. pot. add meat until cooked through, add onion, bell pepper, jalapēno and garlic along with S & P. Cook until veggies are softened.

Add beer and them simmer for 30 seconds. Stir in chili powder, brown sugar, cumin, oregano, more S & P, tomato paste. Cook for a minute, then stir in broth, beans and tomato puree. Bring to a boil and reduce heat to med-low. Cook for 2 hours!
