Sprouted Wheat Sourdough Bread recipe. Very aromatic healthy bread. Thru the addition of a soaker that contains flax seeds the crumb is very moist and delicious:)
Recipe for a 1000g loaf:
1. Sourdough
-47g sprouted wheat flour
-47g water
-10g sourdough started very active fed min x2
DT 75-79F 12h
2. Soaker
-10g cracked rye berries
-10g chia seeds
-12g ground flax seeds
-15g rye flakes
-22g ground old bread
-100g water 185F
let it stand for 4-6h
3.Dough
-sourdough
-soaker
-186g strong wheat bread flour
-163g sprouted wheat flour
-23g pumpernickel rye flour
-200g water
-10g barley malt
-7g salt
-5g yeast if you don't want to proof over night or your sourdough is not so active
