Cong Boon Ooi is the owner operator of Ooink Ramen in Seattle, Washington and he is producing some of the most unique and flavorful Japanese comfort food in the United States.
Chef Taus Schumacher moved into the Capitol Hill neighborhood four years ago after arriving from his native Denmark. As a new resident of the area, Taus ventured out to explore his community in search of local cuisine.
He soon stumbled into an anassuming and newly opened Ramen shop, resting above a grocery store, with a clever name and a passionate staff.
Little did he know, that his first experience with Ramen would be here, and it would rival some of the most renound noodle soup establishments he would visit years later in Japan.
With pork broth made from bones sourced from the Food & Wine celebrated Beast & Cleaver butcher shop, noodles made from scratch every day and some of the most spicy and intense Szechuan peppers shipped directly and specifically to him from China, Chong Boon Ooi served Taus the best Ramen he's ever had and the two have cultivated a friendship ever since.
