Making Xin Chào’s Salmon Crudo with the new Arka salmon from Multi-x

Christine shows you how to make the salmon crudo on the menu at her restaurant, Xin Chào, using the new Arka salmon @arkasalmon from Multi-x. Here’s the recipe to feed two so you, too, can make it at home:
For the vinaigrette, you’ll need:
2 tbsp orange juice
1.5 tbsp lemon juice
1 tbsp soy sauce
2.5 tsp neutral oil
1/2 tbsp grated ginger
1 dash sherry vinegar
For the crudo:
Thinly sliced cucumber rounds
1/4 lb Multi-x Arka salmon filet, skinned & thinly sliced
For garnishing:
Finishing salt
Black sesame seeds
Wasabi tobiko
Micro-herbs
Whisk together all the ingredients for the vinaigrette. To serve, arrange cucumber slices overlapping inside a shallow bowl in a circle. Arrange the Multi-x Arka salmon pieces on top of the cucumber.
Sprinkle with finishing salt and Sesame seeds. Top with small dollops of tobiko. Pour the vinaigrette into center of circle and garnish with herbs.
