One-Pot Brothy Beans with Herbs & Lemon

This is such a flavourful pot of beans that's naturally vegan and gluten-free. Lots of onion, garlic, shallots, herbs, spices, miso, and lemon contribute to the depth of flavour in the rich finished broth. These beans take about 1 and a half hours to simmer and get soft, but the time is mostly inactive. I like to serve these with lots of crusty bread and a simple green salad.
The beans are soaked in warm water with salt overnight. The next day, they are drained and rinsed. Then we start on our flavour base. Big pieces of onions, shallots, and celery are sautéed until deeply golden on the edges--about 10 minutes. The herbs and spices (bay leaf, garlic, thyme, oregano, smoked paprika, and ground chillies) go in next and are sautéed until very fragrant. The drained beans and stock are added and the whole thing is seasoned liberally with salt and pepper. The lid is set askew on top and the beans begin a long, slow simmer until tender. I fish out the big pieces of celery and the bay leaf before dissolving the miso with a bit of hot broth and adding it back in. A finishing sparkle of lemon juice goes in and some chopped fresh dill or parsley. Enjoy!
