🥣 Japanese Microwave Mackerel & Tofu Soup
(Immunity-Support Comfort Soup)
Ingredients (1 serving)
• 1/2 can mackerel (in water)
• 150g tofu
• Green onions (to taste)
• Carrot (to taste, thinly sliced)
• A small amount of grated ginger
• 200ml water
• 1/2 tsp chicken stock powder
• 1/3–1/2 tsp kelp tea powder (kombu tea)
If you don’t have kelp tea, just add a little extra chicken stock and a pinch of salt.

Instructions
1. Chop all ingredients (except green onions).
2. Place everything into a microwave-safe bowl.
3. Cover loosely with plastic wrap.
4. Microwave at 600W for 4 minutes.
5. Add green onions and microwave for 1 more minute.
6. Stir well and enjoy warm.
