Hi, I’m a mom living in Tokyo.
When someone in my family has a fever or catches a cold, I often make this egg rice soup.
In Japan, many people think of egg rice soup as a gentle meal to eat when they’re sick.
It’s warm, easy to digest, and comforting when you don’t have much appetite.
Rice provides energy, eggs add protein, and ginger helps warm the body.
The ingredients are simple, but the soft texture and warm broth make it easy to eat even when you’re not feeling well.
Meals like this may look very simple, but they are one of the small ways Japanese moms care for their families through everyday cooking.

Ingredients (2 servings)
• 1/2 cup uncooked rice
• 300 ml water
• 300 ml dashi broth
• grated ginger (to taste)
• chicken (optional)
• 2 eggs
• chopped green onion
• 1/2 cucumber, finely chopped
• 1 tbsp sesame oil
• 1/2–1 tbsp soy sauce
• 1/2 tsp kombu tea powder
For the dashi, I used instant dashi and followed the recommended amount on the package.

Instructions
1. Rinse the rice and add it to a pot with 300 ml of water.
2. Bring it to a boil and simmer until the rice softens and the water reduces.
3. Add 300 ml of dashi mixed with grated ginger.
4. Add the chicken and simmer until cooked through.
5. Pour in the beaten eggs and let them cook gently in the soup.
6. Add green onions, cucumber, sesame oil, soy sauce, and kombu tea powder.
7. Stir lightly and simmer briefly.
The result is a warm, comforting bowl of egg rice soup that is gentle on the stomach and easy to eat when you’re sick.
